FOOD PHILOSOPHY

At chef dimi we feel the need to care for and protect our family. That is why we must first take care of the planet, step by step to heal it again. The industrialization we live also affects what we eat: processed products, full of preservatives, dyes and sugars to lower costs. Foods full of flavor enhancers but empty of nutrients that wear down our health.

 

We understand the importance of taking care of our planet because it provides us with the most natural and tasty ingredients to enjoy food to the fullest and take care of our bodies. Our ways of caring for the planet are many and all very important for the product, the local economy and for ourselves:

 

  • We buy local / national ingredients of eco-sustainable production.
  • We buy seasonal products or products from its country of origin.
  • We cook ingredients with high nutritional values to cover the entire body system.
  • We treat the product properly, respecting the methods and cooking times.
  • We don’t use artificial chemicals, preservatives or colors. Nature provides us with organic alternatives.

Meet Dimi, founder & head chef

This is me, Dimi, a constant self-taught person in healthy, nutritious and energetic cooking, as well as a wife, a mother of two incredible children, an enterprising and happy woman.

 

I come from a family of multidisciplinary artists. My parents, born in Bulgaria, have been seamstresses and upholsterers all their lives, a profession that my sister continues. My daughter is a graphic designer in Madrid and my husband is a very creative computer scientist. With our unique creations we motivate and help each other, and this makes my family my favorite activity of the day.

 

After so many years of constant training on the food that we purchase nowadays, its cultivation and the changes we now experience in its manufacture, I have achieved a perfect synergy between products, cooking, presentation and nutritional values ​​that make mealtime an unforgettable experience and best of our favorite moments.

Career

I trained in international cuisine for the first time in Bulgaria, when I was 16 years old, at the Culinary Center in Haskovo. Later we moved to Spain where I raised my children, got married and was promoted as Chef for some of the most outstanding cuisines on the Costa del Sol.

 

I had the great pleasure of feeding greats like Julio Iglesias, his family and personal team, of learning and promoting in restaurants like Nobu and Puente Romano and of working hand in hand with great culinary artists. Personally, my vitality and inner strength have helped me achieve each and every one of my goals.

 

My next goal? Make my services known and feed families as deserving as mine to show them that, no matter the circumstances or inconveniences, we must live our special moments, highlight them and above all, enjoy them.
